Gluten-Free Brownie Recipe

Hello!

Mother's Day is approaching and now is the time to let your Mom know how much you appreciate everything she's done for you.

If you or your mom have a sweet tooth but are watching sugar intake, try the Gluten-Free Low Carb brownie recipe below.  The recipe is wheat-free and only calls for 1/3 cup maple syrup for the entire batch, but they're so chocolatey and delicious you'd never know they're so healthy! Share how they turn out with a post on Acupuncture Boulder's Facebook page.

Gluten-Free Low Carb Brownies

Modified from The Primal Blueprint Cookbook
Ingredients:
1 3/4 cups walnut meal (Grind up 1 3/4 c. raw walnuts in a food processor until it looks like breadcrumbs)
3/4 cup cocoa3/4 tsp baking powder
3/4 tsp baking soda
pinch of salt
2 large eggs*
1 cup coconut milk (or milk or other milk substitute)
1/3 cup maple syrup*
2 tsp vanilla extract
1/3 cup gently melted extra virgin coconut oil (or butter or other mild vegetable oil)
*room temperature
  • Grease a 13 x 9 or 8 1/2 x 11 inch pan.
  • In a medium bowl, mix the walnut meal, cocoa, baking powder, baking soda, and salt.
  • In a small bowl, whisk the eggs for a minute, then add the coconut milk, maple syrup, vanilla, and oil, whisking until completely blended.
  • Immediately add the wet mixture to the dry mixture, mixing until there are no dry pockets.
  • Pour the mixture into the pan.
  • Bake for 35-40 minutes at 350 F. Cool before cutting.

The Importance of B12 Vitamins

Could Vitamin B12 deficiency be causing your chronic cough?

Vitamin B12 fuels many of your body’s most important functions:

proper food digestion and absorption
immune system
nervous system function and sleep cycles
mood regulationmental clarity, concentration, memory
formation of red blood cells (needed for energy)
proper circulation  


But a recent study also found vitamin B12 deficiency to be related to chronic cough. Since vitamin B12 is present in natural form only in animal sources of food such as beef, clams, salmon, chicken, pork, milk and eggs, strict vegetarians and vegans are high on the list of those who could be B12 deficient. Other symptoms of B12 deficiency include anemia, fatigue, weakness, constipation, numbness and tingling in the hands and feet, depression, poor memory, and soreness of the mouth or tongue. But even non-vegetarians, especially older people and  those who take antacid or diabetes medications, may not produce enough instrinsic factor to absorb B12 effectively from food. And all of us need more B12 when we are under stress.

Taking B12 supplements is a good way to make sure you are getting enough. Not all forms are equal, however. MethylCobalamin is the form that is active in the body. However many supplements consist only of CyanoCobalamin, which may not be absorbed as well by the body. Since B12 is water soluble, it is very safe to supplement and there have been no documented cases of overdose. (It is contraindicated, however, if you have  the hereditary disease known as Leber's optic neuropathy.)

Happy New Year!

I hope this finds you well and enjoying an inspired Year of the Dragon! Seasonal Allergy Elimination
The winter months are the best time to clear pollen allergies
